Where the tongue map actually came from
The original work belongs to David P. Hänig, a German scientist whose 1901 paper "Zur Psychophysik des Geschmackssinnes" measured taste *thresholds* — the faintest concentration of a substance a given spot on the tongue could detect. He found that some regions were slightly more sensitive to certain qualities than others. That is a far cry from saying a region tastes *only* one thing.
The detail that unravels the whole myth is what Hänig didn't plot. As Charles Spence documents in a 2022 review in *Current Research in Food Science*, Hänig left saltiness off his graphs entirely, because he found salt was perceived at roughly the same threshold everywhere on the tongue. From there it spread through American classrooms for generations, one of the most durable errors in popular science, precisely because it was simple, visual, and easy to "test" at a dinner table by dabbing sugar on your tongue and nodding.
The Society for Neuroscience's BrainFacts.org laid out the sequence plainly in 2018: Hänig recorded that response *strength* varied by location, and Boring's 1940s redrawing misinterpreted and misrepresented those original findings. The myth is a citation gone feral — a real study, honestly reported, mangled in transmission.
Modern measurement confirms the correction.
